I thought the Indian-style definition of caste was the true one

Many Zhangs including our own Sherman have told that story or a similar one but the construction of Chinese bows dates so far back into the Stone Age that the legend is certainly apocryphal. There weren't that many caste-like groups in ancient China other than slaves/serfs and other unfree people, and in general China had a trend toward increasing social mobility as history progressed. Ancient Spartan helots or modern American blacks are a lot more similar to Indian castes than anything in medieval England. And I believe most brahmins do not have any kind of priestly occupation.
